In January 2015 after over 7 years working together, they decided it was time for them to open their own restaurant.

Lobos Meat & Tapas is born from the love of excellent meat cuts, good wine, hospitality, Spain and London.

These “Lobos” are not scared of showing their guts to visitors - quite the opposite – they are very proud of it.

A relaxed and convivial atmosphere greeted Sharking upon entrance; the ground floor bar area doubles as a charcuterie and jamon ham carving zone and provides a novel draw for London’s eclectic diner mix.

The tapas-centric food menu bellowed variety, from Iberico ham appetisers, squid fritura and the classic patatas bravas, to herb crusted lamb and Uruguayan picanha & bone marrow, just a clutch of dishes available on the menu.

Hot on the heels were a variety of tapas dishes, including heart-warming ham, chorizo and smoked bacon croquettes.

By and large though, the dishes were reasonably priced and certainly not out of place in the bullring of London’s lofty tapas prices.

The squid and prawn paella with seafood rice, a dish that by anyone’s standards should provide a sizeable yardstick to the authenticity of any tapas restaurant, was a let down.

I’m not so sure their second restaurant on Frith Street in Soho is quite as buzzy (the second floor dining room does have an open kitchen but the space is quite plain) but the food is outstanding.

These three simple dishes are the benchmark for any tapas restaurant – here, all are generously seasoned with salt and olive oil and the quality is top notch.

Plump and juicy prawns (£10.50) come in a bubbling butter sauce with thick slices of crisp garlic and chilli.

The Iberico pork selection (£28.50) is a board of mighty fine pig.

The food at Lobos was nothing short of outstanding.

Walk into Lobos Meat & Tapas and you’ll get a proper Spanish welcome.

With dark-red walls, low lighting and small plates whizzing out of a frenetic, semi-open kitchen, this new Soho branch of the Borough market original has got atmosphere.

The pig-free plates are just as good.

It might feel a tad boring but you’ll need it after all that oil.

When asked for a recommendation, my waiter tried to strong-arm me into getting the most expensive plate on the menu – a sirloin for £32.
